Ingredients

  • 4 cups diced small red potatoes
  • Canola oil cooking spray
  • 3 tablespoons rosemary
  • 3 tablespoons thyme
  • 1/3 cup whole-wheat flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 whole eggs
  • 1 pound chicken breasts (four 4-ounce breasts)
  • 1 clove garlic, minced
  • 1 cup chicken broth—low sodium
  • 1/4 cup capers
  • 1/8 cup lemon juice
  • 1 cup white wine
  • 1 lemon, thinly sliced
  • 3 cups asparagus—ends snapped and cut
  • 2 tablespoons fresh chopped parsley

Directions

Potatoes. Preheat oven to 350°F. Spread a single layer of red potatoes evenly in a baking dish. Spray with a very light coating of canola oil. Evenly sprinkle rosemary and thyme over top. Bake for 45 minutes, misting them with oil and shaking them every 15 minutes to ensure they cook evenly. Five minutes before serving, broil potatoes to get them extra crispy.

Chicken. Mix whole-wheat flour, salt, and pepper and spread evenly in a shallow dish. Beat eggs in a wide bowl. Dip each breast into the eggs and then coat with a thin layer of wheat flour on all sides. Pat off excess flour. Spray bottom of pan with 2-second spray of canola oil cooking spray. Set on medium heat. Add breasts to pan and cook until outsides of breasts are light brown (approximately 2–3 minutes on each side). Transfer to a platter and keep warm. Using same pan, spray another 1-second spray of canola oil and add garlic. Cook for 30 seconds. Add chicken broth, capers, lemon juice, and cooking wine, and bring to a boil. Add chicken and put thin slices of lemon over chicken. Cover and reduce heat to a simmer. Cook for 10 minutes.

Asparagus. Bring water to a boil in a large pot. Add asparagus and cook until bright green. Remove from pot and drain. Run cold water over asparagus. Serve potatoes, asparagus, and chicken together, and sprinkle the 2 tablespoons of parsley on top for presentation.

It’s also low in fat and offers a bit of protein. It is a great way to end a fun-filled evening with friends—just get ready for lots of compliments. (Makes 12 Servings)

Ingredients

  • 3/4 cup whole-wheat flour or whole-wheat pastry flour
  • 1 1/4 cups sugar
  • 1/4 cup cornstarch
  • 12 large egg whites—room temperature
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons cream of tartar
  • 2 teaspoons almond extract
  • Angel food cake pan
  • 2 1/2 cups Truwhip topping*
  • 1 kiwi—peeled and cut crosswise into 1/8-inch slices
  • 1/2 cup strawberries—stemmed and cut lengthwise into 1/8-inch slices 1/2 cup blueberries
  • 1 small banana—cut into 1/8-inch slices

Directions

Cake. Preheat oven to 325°F. Blend whole-wheat flour in food processor until very fine (if using whole-wheat pastry flour, you don’t need to do this). Sift together finely blended flour, ¾ cup of the sugar, and cornstarch in a bowl. Set aside.

Beat egg whites, salt, and cream of tartar until they form soft peaks. Gradually, add remaining ½ cup of sugar and almond extract, and beat until mixed. Gently fold in flour mixture, one third at a time. Pour into angel food cake pan and bake for 1 hour or until cake is springy when poked. Remove from oven and invert cake to cool. Allow it to cool completely before removing from pan.

Decoration. Defrost Truwhip in refrigerator for 4 hours prior to decorating (do not microwave). Once cake is completely cooled from baking, remove from pan and cut in half to create an upper layer and a lower layer. Using a spatula, evenly apply a layer of truwhip onto the top of cake’s lower layer.

Take a portion of the kiwi, strawberries, blueberries, and bananas, and place into truwhip to create a single layer of fruit. Place upper layer of cake on top. Use rest of truwhip to evenly coat sides and top of cake. When done, use remainder of kiwi, strawberries, blueberries, and banana to decorate cake on the top and sides, creating a beautiful, colorful, and tasty dessert.

Store any unused portion in a sealed container and refrigerate.

64 of 66 people found the following review helpful. Great Book for Real People Trying to Live Healthy By David Wax I will admit that I was a bit skeptical about this book when it first came out. I follow Brett Blumenthal's (the author) blog now and again as she has some really interesting articles about health and wellness. When I got her Newsletter announcing the book I was interested, but didn't know if I a book like this would help me. I am a pretty simple guy, and don't want to pay too much attention to my diet. I like to live healthy (exercise, no fast food, etc.) but I don't want to count calories, or live on someone else food (or food suggestions). Having faith and interest in Brett's work I decided to purchase a copy.About 1/4 of the way through this book I found myself pleasantly surprised. This book is exactly as advertised. It is not some fly by night or prescriptive diet, but rather a set of simple rules to follow when making food and meal choices. Brett's rules are easy to understand and implement in my life, and most importantly she did not tell me what to do. Rather she gave me straightforward rules to live by, which have significantly altered my choices. Whether I am looking at those Potato Chips at the gas station, or deciding on what bread to buy at the supermarket Brett's advice continues to pop into my head and help me make better choices. Also, I have tried a number of the recipes (at the back of the book) now and they are great. I especially like the whole wheat calzones, and the whole wheat pancakes (if you get the chance to try either of them).Since I have read this book a few weeks ago (and followed the rules in my own way) I have found that I have more energy, less extreme food cravings, and most importantly, I have lost 4 pounds. I look forward to following the "Get Real" rules, and continuing my weight loss.I would highly recommend this book to anyone who is tired of the fad diets, or calorie counting plans. If you are a regular person who just wants to continue to live their normal life, but make better decisions, and feel healthier then this book is for you.

An Introductory Look into Eating Healthier By Rosebud If you eat the standard American diet of pre-packaged processed foods, sweets and fast food, this book is a good beginning look at a healthier way of eating. But, for people who are already down the road, even a bit, this book has little to offer.Using the catch words of "stop dieting" implies that following the recommendations in this book will automatically make you lose weight, which is not necessarily the case. One can overeat whole foods too; for people looking for clear guidance to slimming down,this book does not offer a clear enough road map.For me, the most glaring omission is enthusiasm, motivation and encouragement. Maybe some wit or personal stories would be helpful. It is dry enough that I fell asleep twice while reading the 129 page book.The section that sites studies that eating a less varied diet helped people stay thinner aggravated me. This is EXACTLY how to un-motivate someone to try eating differently! Even if it is true, for people looking for a new way to eat, telling them essentially to eat repetitively isn't going help them stay the course.Lastly, the recipes aren't very interesting. Eating healthy, whole, organic, sugar-free foods can be, and is, more interesting than the recipes reflect. All in all, this book was a miss for me.

By James Mccloskey Brett Blumenthal's "GET REAL" and Stop Dieting eliminates much of the confusion and contradiction people hear about nutritional advice. By focusing on whole foods, fiber, lean proteins, and healthy fats, one can construct a gameplan to stay healthy. I learned some neat things -- such as quinoa being a complete protein, and which fibers are soluble. She taught me that spices can often replace salt and sugar with relatively few calories. I like the preferred brands chapter an awful lot, because it allows the reader to find the best items easily in the grocery store. And for those of you who love to cook, Brett includes recipe for every meal as well as snacks and dessert. Now that I've read GET REAL and enjoyed it, I plan on keeping this book closeby to make sure I keep on track with my nutrition and weight-loss goals. I highly recommend this book!
