Excerpt from Simple Italian CookeryBeef Soup Stock(Brodo di Carne)1 pound of round of beef2 quarts of water2 small, new carrots, or 1/2 of an old carrot1/2 pound of beef bones2 small potatoes1 onion1 tomato, fresh or cannedParsleyBoil the beef, bones, and vegetables in two quarts of water over a slow fire - adding pepper and salt. Skim occasionally, and after two hours add two tablespoons of sherry; then strain through fine soup-strainer or cheese-cloth. This is the basis of all the following soups, except when otherwise stated.To make this stock richer, add a turkey leg to above receipt; boil one and a half hours, then add one-half a pound of finely chopped beef. Can't be sure what that means. I had no problem reading it in English. Being three quarters Italian, and yet not having an Italian last name, it doesn't bother me that the names aren't Italian. Having a non-Italian name doesn't make me less Italian.As far as "Simple Italian Cookery" goes I find it a pleasure to read. None of those silly pictures and detail on how things should look after being prepared by detailed instruction. Perhaps it's my advantage of growing up in an Italian household with an immigrant mother from the Abruzzo that helps. Also, I was nurtured on Italian food and culture that lead me to be a chef for the last 35 years.If there is any fault of this little book at all, it's that it may not appeal to those looking for a coffee table cookbook.

Not olive garden recipes this is real traditional Italian cooking for the peasants. It was written some time ago so some of the terms need clarifying, not a problem for the experienced cook.
