By Wildfire This isn't a book for the intermediate or advance butcher, but that wasn't what it was meant to be either. What it is, is an EXCELLENT book for the home shopper, and those wishing to get the best value for their hard-earned food dollar.If I were going to add anything to this book, it would probably have been pictures or charts showing exactly WHERE the cuts of meat actually come from on the animal.Overall, it's a simple,clear and easy book for the shopper or "new butcher" to use and learn from.
